TURKEY RICE BAKE
INGREDIENTS:
6 slices bacon
1 medium onion, chopped
1/4 cup sliced onion
2 cups cooked rice
1 package (10 ounces) frozen chopped spinach or
broccoli, cooked and drained
2 tablespoons chopped pimiento
1/4 teaspoon salt
1 can (10 3/4 ounces) condensed cream of
mushroom soup
1/2 cup sour cream
turkey slices, 6 to 8 large slices or enough sliced
turkey for 6 people
1/2 cup fine dry bread crumbs
1 tablespoon melted butter
DIRECTIONS:
Cook bacon until crisp. Drain on paper towels
then crumble. In 2 tablespoons of the drippings
in the same skillet, cook onion and celery until
just tender. Combine the rice, bacon, onion,
celery, spinach, pimiento, and 1/4 teaspoon of salt.
Combine the soup and sour cream then stir half
of it into the rice and vegetable mixture. Spoon
mixture into a lightly greased 11x7-inch baking
dish. Arrange turkey slices over rice and vegetable
mixture. Spoon remaining soup and sour cream
mixture over turkey. Toss bread crumbs with butter
and sprinkle around edge of casserole. Bake in a
preheated 350° oven for 30 to 35 minutes, until hot
and browned around the edge.
Serves 6.

The iconic images of the American
holidays captured on film, in writing, and in
art reflect the wonderful spirit of the season.
The heartfelt stories of the returning soldier,
the prodigal son and the redeemed soul
resonate with each of us. But underneath
all of this warmth is the real-life stress
associated with seasonal expectations (over
the top) and family (potential minefield).
Rather than seeing these as inevitable
artifacts of a long year coming to an end,
and the predictable behavior of family
members, we can use these circumstances to
heal relationships.
I grew up in a family of twelve with an
occasional in-house guest. There was always
plenty of kindling to go around, waiting to
be ignited, during our family gatherings!
Even though all of my siblings are
caring, spiritual and responsible people,
the deep fault lines are always there,
ready to swallow up even the most well-
intentioned. The sacrificial lamb might
carry the new gripes and fresh wounds
into the new year. Families are just messy!
So, because this column is designed to
be brief, let me offer two simple ideas that
may change your holiday experience for
the better:
People come together for the purpose of
healing. In the Hebrew tradition this is
known as tikkun, a word meaning "fixing."
We can always use more tikkun, more
awareness of what can be compassionately
addressed in our families.
Setting an intent is very powerful. In
the Hawaiian traditions, there is a practice
know as Ho'oponopono. If one carries
this within and repeats it (silently) both with
people and when alone, it can shape our
thinking and reactions. It is this:
I love you.
Thank you.
I'm sorry.
Forgive me.
This can be said in any order that seems
best to you.
In closing, I hope we can all remember
the spirit of family, friends and holiday and
embrace the ongoing need for healing in this
beautiful life we have.
