INGREDIENTS:
PORK
6 tablespoons olive oil
1 1/2 tablespoons freshly ground black pepper
1 tablespoon salt
2 teaspoons freshly grated orange zest
2 teaspoons minced fresh rosemary leaves
2 1/2 pounds pork tenderloins, trimmed
Rosemary Balsamic and Orange Pan Sauce*
1 large shallot, minced
1/2 cup red wine
1/2 cup low-sodium chicken broth or stock
3 tbsp cold unsalted butter, cut into small pieces
1 tablespoon balsamic vinegar
1 teaspoon minced fresh rosemary leaves
1 teaspoon freshly grated orange zest
Salt and freshly ground black pepper
PAN SAUCE
2 to 3 tablespoons minced shallot or onion
1/2 cup wine
1/2 cup low-sodium broth or stock
3 tbsp cold unsalted butter or heavy cream
Vinegar or lemon juice, to taste
Fresh herbs or other aromatics
Salt and freshly ground black pepper
DIRECTIONS: Preheat the oven to 375 degrees F.
Mix 3 tablespoons olive oil, freshly ground black pepper, salt,
orange zest, and minced rosemary in a small bowl. Rub the oil
mixture all over the trimmed pork tenderloins and place them in
a large baking dish. Cover and let the pork marinate 20 minutes.
Heat the remaining 3 tablespoons oil in a large skillet over
medium-high heat. Add the pork and sear, cooking until browned
on all sides. Remove the pork tenderloins from the skillet and
place into an oven-safe dish; cover. Roast the pork until a meat
thermometer inserted into the thickest part of the meat reads about
145 degrees F, about 15 minutes.
For the pan sauce: Pour off the majority of the cooking fat leaving
any browned bits in the pan. Heat the pan over medium-high heat
and add the shallot and the wine. Continue cooking until most of
the wine has cooked off, scraping the browned bits off the bottom
of the pan.
Add the broth and continue cooking until the sauce has reduced
by half. Remove from the heat. Stir in the butter, 1 piece at a time,
until fully incorporated.
Stir in vinegar, rosemary, orange zest, salt, and pepper, to taste. Let
the pork rest for 10 minutes before slicing. Drizzle sauce on pork.
The better that we, as practitioners,
understand how various conditions
develop, the more effective our treatment
outcomes will be. With diagnostic tools
such as MRI’s, CAT scans and sophisticated
lab procedures, we know more about the
inner workings of the patient than ever
before. This allows for precise treatment
of a variety of health challenges. The
consensus is that if we can continue to
develop even better protocols for diagnosis
and treatment of disease, we will eliminate
or dramatically reduce its occurrence.
While this is a worthy goal, it may be only
part of the picture.
Involving the Patient
Dean Ornish, M.D., author of many
books on the prevention and reversal of
heart disease, uses a simple example to
demonstrate the importance of the doctor-
patient-community model:
Illness vs. Wellness
It is his belief that, in order for lasting results to be realized, the patient must come to some
level of awakening regarding his or her condition. In the process of discovering oneself, the
healing is complete. This approach places the treatment of the individual over the treatment
of the condition, while not excluding the latter.
Here, You Fix It
To be fair, when we pay someone to help alleviate our suffering, we expect something in
return for our money: we expect results. According to a recent article in Consumer Reports
magazine, 79% of patients felt that their doctors delivered on this expectation, while only
37% of the doctors felt they had. The percentage of patient satisfaction dropped to 31% when
it came to treating fibromyalgia, headaches, back pain, depression, anxiety and immune
system disorders. What this suggests is that there may be a point in certain disorders where
patient involvement can make all the difference. In his book Shopcraft vs. Soulcraft, Matthew
B. Crawford describes how, after leaving the corporate world and opening a motorcycle shop
in Berkeley, he became clear on one thing: he did not design or manufacture the bikes that
were placed in his charge. It became necessary to approach each bike with the perspective
that he could work with the bike as well as on it.
Partnering
The vehicle, the package, that we came in, is unique. We have a mysterious, miraculous,
self-correcting mechanism within this package. This mechanism also contains within it the
instructions on how to fix it. We have only to learn its language and seek the assistance of
those who can help us discover and interpret it.

The Sierra Madre Library is offering a new program to homebound persons in Sierra Madre
called “Titles To Go” - Where volunteers bring the library to you! For more information,

• Sierra Madre Aquatic Center, 611 E. Sierra Madre Blvd., will be open for spring lap swimmers
& walkers starting March 14 through June 12. Hours: 12 noon to 2 pm (Sunday, Monday,
Wednesday, Friday & Saturday) and 7:00 pm to 9:00 pm (Tuesday & Wednesday). Cost
is $100 per person for a spring pass (no daily admission). This is a great opportunity for low
