HERE COMES THE SUGAR TRAIN

SOUTHERN PECAN PIE

INGREDIENTS:

4 Eggs

1 cup Dark Corn Syrup

pinch of Salt

1/3 cup Sugar

1 tablespoon Lemon Juice or Vinegar

4 tablespoons melted Butter

2 teaspoons Vanilla

2/3 cup Pecan Halves

1 (9-inch) Unbaked Pie Shell

DIRECTIONS:

1. Preheat oven to 350 F. 

2. Carefully crack eggs In a medium bowl, 
slightly beat eggs with fork.

3. Add corn syrup, salt, sugar, lemon juice or 
vinegar, butter, vanilla and mix well.

4. Stir in pecan halves.

5. Pour pecan pie mixture into an unbaked pie 
shell. 

6. Bake 35-40 minutes.

Let cook completely before serving.

See if you can relate to this scenario: 
It’s a couple of weeks before Hallowe’en 
and the grocery store is starting to load up 
on piles of candies and sweets. At first, 
you resist the urge to buy, but after a few 
visits to the store, you tell yourself that it’s 
time to buy because they just may run out 
later, and what would you give all those 
trick-or-treaters? Past experience tells 
you clearly that the munchkins will never 
see these particular bags of candy because 
you will have eaten them long before the 
31st. So, this is how many of us kick off 
the holiday season, awash in an ocean 
of sugar. A little nibble here, a defiant 
binge there, we are soon caught up in the 
helplessness of a full blown sugar plum 
adventure. The only relief in sight? That 
New Year’s resolution two months down 
the road.

 
One of the things that we know is that the more sugar we eat, the more we want. We 
may even be aware that it makes us feel tired, dizzy, grumpy, foggy, confused and puffy, but 
once that haze sets in, it’s hard to do anything to change it. In fact, we like being foggy ~ it’s 
comforting, kind of takes the edge off.

 
For many years at our clinic, we did a program called the Winterlude. The mantra was, 
“Come back, don’t get lost.” This was simply an acknowledgment that, indeed, we can and 
do get lost in the demands of family, friends, and the mounting expectations of the holiday 
season. During the Winterlude, we did a gradual elimination of refined carbs and sugars. 
Having witnessed this process a number of times, I can attest that it’s challenging. The 
emotional highs and lows exhibited by many of us would make Joan Crawford look like the 
Dalai Lama.

 
Is there any hope? Not really. No, just kidding! Not surprisingly, the AA tenet of taking 
one day at a time is important. Diet-wise, the key is to lean away from refined carbs. If you are 
prone to craving sugar at night, have a small low-glycemic snack before bed (a small handful of 
raw or lightly roasted nuts and seeds, or a low fat 1” cube of cheese, for example). In the a.m., 
start off your day with a protein-rich breakfast like fresh eggs scrambled with veggies. East a 
small protein snack every couple of hours throughout your day, and focus on simply prepared 
vegetables and protein for lunch and dinner. All in all, it’s important to forgive yourself each 
day for not being perfect just yet and to start each day afresh, enjoying it as totally new.

The City of Arcadia Recreation & Community 
Services Department in partnership 

with the Arcadia Police Department is offering a 
workshop for seniors on ways to protect themselves 
from becoming a victim of fraud. An old scam that 
preys primarily on the elderly, sometimes called 
the “Grandparent Scam”, has found it way back 
to the area. In recent weeks, the Arcadia Police 
Department has taken a couple of reports on this 
type of scam, one of which involved an actual loss 
of money. Don’t become the next victim! Sergeant 
Davis from the Arcadia Police Department will be 
talking to seniors on ways to protect themselves. 

Consumers lose billions of dollars each year to 
fraud. People over age 50 are especially vulnerable 
and account for over half of all victims, according 
to a study conducted by American Association of 
Retired Persons (AARP). People who commit 
these types of crimes, “con criminals,” often 
target older people knowing they have spent a 
lifetime earning their savings. Con criminals go 
wherever they can to find money to steal. They 
use everyday tools—the mailbox, the telephone, 
the Internet—to reach into your pocketbook. You 
can help educate your friends, parents, and others 
by becoming familiar with some of the more 
common scams and how they operate. Then share 
that information with others. 

The workshop will inform you on what to do if you 
have questions on how to handle a situation and 
also give you tips on what to do if an unfamiliar 
person approaches you at home. The workshop 
will be held at the Arcadia Community Center, 365 
Campus Drive, Arcadia, CA 91007 on Tuesday, 
December 7th at 10am. Don’t miss this event….
