If the hot weather is going to stick around,
then we might as well make the best of it
and drink a vibrant, crisp, and refreshing
wine. The Colleleva Verdicchio dei
Castelli di Jesi, Marche 2022 is just the
wine for this hot weather.
Colleleva was founded in 1984. It’s located
on the Adriatic coast between Emilia-
Romagna and Abruzzo. The winery is
near the town of Jesi which is famous for
its ancient fortifications, hence the name
Castelli di Jesi. The grape in this wine is
Verdicchio. Some say Verdicchio is the
greatest white grape varietal in Italy. It
is a grape that can produce fresh, crisp,
and vibrant wines. This is primarily due
to the cooling winds from the Adriatic
Sea, and to the sandy tuffo and clay soils
in the area. The 30-year-old vines are
sustainably farmed. The wine does not
go through malolactic fermentation, and
it is aged in stainless steel tanks for 3
months, and then is aged in the bottle for
2 months. Total production is very small
at 12,500 cases.
The wine is tasting beautifully. There is
lovely aromas of melon, citrus, flowers,
and orchard fruit. On the palate, there’s
lively acidity, vibrancy, freshness, salinity, orchard fruit, and spice. There is also a
little spritz due to CO2 left in the bottle to keep it a little effervescent. The finish
is long and perfumed.
Get a bottle or two for this weekend and this hot weather won’t seem so bad. This
wine will cool you off and it’s deliciously refreshing!

FETA MEATBALLS WITH
ZUCCHINI SPAGHETTI

INGREDIENTS
1 lb. ground beef
1 large egg
1/2 c. crumbled feta cheese
1/3 c. panko
1/4 c. finely diced onion
3 garlic cloves, minced
1 1/2 tsp. dried oregano
1 tsp. ground cumin
2 tsp. kosher salt
1/2 tsp. black pepper
4 Tbsp. salted butter
24 oz. fresh zucchini noodles
Grated zest and juice of 1 lemon
DIRECTIONS
1 Preheat the oven to 400˚ and line a baking sheet with parchment paper. Combine the beef, egg, feta,
panko, onion, garlic, 1 teaspoon oregano, the cumin, 1½ teaspoons salt and the pepper in a large bowl. Mix with
your hands until evenly combined.
2 Shape the mixture into 16 small meatballs (about 2 tablespoons each) and arrange on the baking sheet.
3 Bake the meatballs until cooked through, about 15 minutes.
4 Meanwhile, melt the butter in a large deep skillet over medium heat. Once melted, remove from the heat
and add the zucchini noodles, lemon zest and juice and remaining ½ teaspoon each oregano and salt. Toss well.
Serve the meatballs with the zucchini noodles.
