INGREDIENTS:
* 2 crust pastry recipe
* 2 Tbsp. olive oil
* 1 red onion, chopped
* 1/2 large head red cabbage, chopped
* 3 cloves garlic, minced
* 3 Tbsp. balsamic vinegar
* 1 tsp. sugar
* 1/2 cup water
* 1/2 cup cooked cubed corned beef or ham
* 1 cup cubed Gruyere or Swiss cheese
* 1/4 cup grated Parmesan cheese
DIRECTIONS:
Prepare pie crust and divide dough into four
pieces. Roll out each between waxed paper into
7” rounds. Fit each into a 4” tart ring, or simply
put the crusts on two cookie sheets. Set aside.
Preheat oven to 425 degrees. Saute onion in olive
oil in a large skillet until soft. Then add cabbage,
vinegar, sugar, and 1/2 cup water. Cover
pan and simmer for 10 minutes, until cabbage is
soft, stirring frequently. Then uncover pan and
cook for 5-8 minutes longer on medium high
heat, stirring frequently, until liquid is absorbed.
Divide half of the cabbage mixture evenly
among the pastry circles. If you aren’t using the
tart rings, just mound the mixture in the center
of the circles of pastry. Divide the corned beef
evenly onto the cabbage mixture. Sprinkle with
Gruyere cheese cubes and grated Parmesan
cheese, and top with remaining cabbage mixture.
Fold crust edges over the top of the cabbage
mixture, pleating to form a ruffled edge.
Bake tarts at 425 degrees for 20-30 minutes. Remove
tart rings and serve. Serves 4
In the process of working with one of my
patients earlier this week, the subject gravitated
to concerns she had about “turning
off her mind.” “Mary” stated that it was
normal for her to be worried about one
thing or the other most of the time. When
I asked her if there was a time during the
day when she did not worry, she replied
that she no doubt worried even while
sleeping! Apparently, the subject matter
wasn’t an issue: she was an equal opportunity
worrier.
From a clinical point of view, we know
that unmanaged stress leads to the development
of physical problems. Since Mary
presented with severe neck pain, along
with the usual treatment modalities, we
talked about taming that monkey mind
we all know so well.
In the Health and Wellness section of last
Sunday’s “Los Angeles Times”, there was
an article on mindfulness therapy. It mentions a research article published in The Journal
of Consulting and Clinical Psychology which combined findings from thirty-nine previous
studies involving 1,140 patients. Mindfulness therapy was found to be effective for alleviating
anxiety in patients recovering from cancer and other serious illnesses; the greatest
degree of improvement, however, was demonstrated in those patients suffering from mood
disorders, including anxiety.
What exactly is mindfulness therapy? In a nutshell, it is the practice (practice, practice,
practice) of bringing the mind back to the present moment. This is done a number of ways,
including breath work, movements, and various mental exercises that dismantle the habits
associated with worry. As an example, the article in the Times shares an insight by a patient
who does this simple practice when negative thoughts occur: “There’s a thought, and feelings
are not facts.” To realize that our feelings need not be our source of truth could go a
long way in reorganizing our stress habits.
Another practice that works well in this busy world is to ask ourselves, “Where are my feet?”
Inevitably, if we take a few breaths, we find that initially we were nowhere near those feet
but, after a moment of mindfulness, we find them just where they ought to be.
