PLANTAR FASCIITIS

Chicken and Vegetable Pot Pie

 

INGREDIENTS

1 pound boneless, skinless chicken breasts

1 tablespoon olive oil

2 onions, chopped

4 carrots, diced

3 tablespoons all-purpose flour

1/2 cup dry white wine

2 cups 1 percent milk

1 10-ounce package frozen peas

1 tablespoon fresh thyme

kosher salt and black pepper

1 9-inch store-bought piecrust, thawed if frozen

DIRECTIONS

Heat oven to 400° F. Cook the chicken in a pot 
of simmering water until cooked through, 10 to 
12 minutes; let cool, then shred.

Meanwhile, heat the oil in a saucepan over 
medium heat. Add the onions and carrots and 
cook, stirring, until they begin to soften, 6 to 8 
minutes (do not let them darken). Sprinkle the 
flour over the vegetables and cook, stirring, for 
1 minute.

Add the wine and cook until evaporated, about 
5 minutes. Add the milk and simmer until 
the sauce thickens, 2 to 3 minutes. Stir in the 
chicken, peas, thyme, ••• teaspoon salt, and ••• 
teaspoon pepper. Transfer to a shallow 1•••- to 
2-quart baking dish.

Lay the crust on top, pressing to seal. Cut several 
vents in the crust. Place the pot pie on a baking 
sheet and bake until bubbling and the crust is 
golden, 30 to 35 minutes.

For many people, those first few steps fresh out of bed 
are a painful and challenging event in the morning. 
The discomfort caused by this condition, known as 
plantar fascitis, may continue throughout the day 
with various degrees of intensity. With a few simple 
changes, it is possible to greatly reduce and even 
eliminate the symptoms, especially if we understand 
some of the causes.

Shoes. The first thing to check are the outer and inner 
edges of your shoes. Are they worn? If so, have new 
heels put on or purchase another pair of shoes. If heel 
wear is an ongoing problem, custom orthotics should 
be made. 

Weight. Shedding a few pounds can make a world of 
difference in a short amount of time. 

Excessive activity. Are you overdoing your 
training routine? Try non-weight-bearing 
strategies for three weeks, ie. swimming, biking, or 
yoga. 

Diet. A diet high in pro-inflammatory foods (red 
meat for some, peppers, sugar, corn sweeteners, 
sodas and refined sweets) can promote irritation. 

What to Do About P.F.

 There are some home treatment therapies that are 
simple and effective.

Rolling the foot over a soup can or rolling pin can 
help stretch the tissue. A golf ball can be used to 
address specific areas. 

A hot and cold water dip is beneficial. Place 
your foot/feet in a bucket of warm water for five 
minutes, then into a bucket of ice water to tolerance. 
Return the feet to the warm water for five minutes, 
then back into the cold water. Gradually build up 
to five minutes in the ice water. Do three or four 
cycles at a sitting. 

Stretch the foot by placing a thin towel under the 
arch in the shape of a stirrup and gently flex the 
foot upward. 

A special splint can be purchased at the pharmacy 
which is designed to stretch the tissue while you rest or 
sleep. This is typically done each night for six to eight 
weeks.

Other Options

Chiropractors, podiatrists, and physical therapists 
are all familiar with P.F. Approaches such as pulsed 
ultrasound, galvanic therapy, cold laser, and custom 
orthotics may be used to remedy this condition.

How To Make Life Less Taxing

Did you know that you can learn a useful skill that will 
help yourself and help others at the same time?

Here’s how: Volunteer to help older Americans and 
others figure out their taxes.

You don’t have to be a tax professional to get involved. 
Volunteers receive free tax training and are reimbursed 
on a limited basis for qualified program-related 
expenses.

In addition, the program needs coordinators, greeters 
and many other roles filled to serve all its clients each 
tax season. The service is particularly in need of 
volunteers who are bilingual in English and Spanish 
to support the increasing number of Spanish-speaking 
taxpayers seeking assistance.

AARP Tax-Aide, the nation’s largest free, volunteer-
run tax assistance and preparation service served 
more than 2.6 million taxpayers and saved its clients 
more than $115 million in tax preparation fees last 
year alone. Taxpayers who file a federal tax return with 
a refund due to them can also get help investing the 
money in?America’s future. They can purchase savings 
bonds in multiples of $50, up to $5,000, using all or a 
portion of their refund.

Some 7,000 volunteers are needed each year to 
dedicate their time during tax season and sometimes 
throughout the year to help low- to moderate-income 
taxpayers prepare their taxes.

AARP Tax-Aide is a program of the AARP 
Foundation, offered in conjunction with the IRS. 
Though the program gives special attention to people 
over age 60, volunteers and clients do not have to be 
AARP members or even retired.

ANNUAL VETERANS DAY 
CEREMONY NOVEMBER 13TH

Veteran’s Day 
ceremony to 
be held at Hart 
Memorial 
Park in Sierra 
Madre on 
Saturday, November 13, 2010 at 11:00 am at 
the Veteran’s Wall.

 Although Veteran’s Day will be officially 
celebrated on November 11th, the ceremony 
will be held on Saturday. VFW Commander 
David Loera will officiate and Sierra Madre 
Police Chief Marilyn Diaz will be the guest 
speaker.

Pasadena Highlands, an 
independent and assisted living 
community, is proud to provide

first Tuesday of each month. 
Accredited In-Home nursing

Park House / Senior Center

Healthy Eating

The City of Arcadia 
Recreation & Community 
Services Department in 
partnership with Royal Oaks 
Manor is offering a free cooking 
demonstration for adults, 50 
years of age and older, “Simple 
Strategies for Healthy Holiday 
Eating.” The class will be held at 
the Arcadia Community Center, 
365 Campus Drive on Thursday, 
November 18 at 10:45am. At 
this presentation, participants 
will learn:

*How to use the hunger scale 
to manage holiday eating

*Balance Healthy eating while 
enjoying holiday treats

*Modify recipes to create 
healthful holiday deserts
