SURFS UP AND HOW !! 

I was inspired by our recent local big waves that hit both North and South facing beaches. Inspiration 
brought me to Longboard 2011 Blend. Yes, if you have been following these articles you know I have 
been riding a wave of blends recently, why? If done right a blend can be some of the best wines at your 
local wine retailer today, if done wrong well it could end up at the three buck chuck aisle. I think this 
Longboard Blend will make the wine snob in all of us very happy.

I learned one thing this week, while watching the 
waves first hand, I realized that both surfers and 
winemakers spend a lifetime searching for near 
perfect conditions so they can capture and express 
a special moment in time; a great vintage, a perfect wave. Longboard Vineyards was established in 1998 
by Oded Shakked as a way to bring these two passions together. A life-long surfer, Oded travelled and 
surfed the Atlantic Coast of Europe, the waters of Australia, Hawaii, Central America, Mexico, and 
both the Atlantic and Pacific Coasts of the US. As a winemaker with close to 30 years of experience 
in Sonoma County, Oded has worked with the region’s best grapes and grape-growers in addition to 
farming his own grapes on Westside Road just outside the 
town of Healdsburg.

The taste is superb; the finish is fine the tannins are out of 
this world. The cost is right in line with my usual budget 
of $15 to $20 a bottle. The Blend consists of a mixture of 
Cabernet Sauvignon, Syrah, Merlot and a bit of Zinfandel. 
Carignane and Malbec join in . My food pairing is a 
shrimp and red onion pizza. Case allotment is low so you 
might check with your local supermarket.

CINNAMON-APPLE 

PORK CHOPS

TABLE FOR TWO by Peter Dills

INGREDIENTS:

2 tablespoons reduced-fat butter, divided 

4 boneless pork loin chops (4 ounces each) 

3 tablespoons brown sugar 

1 teaspoon ground cinnamon 

½ teaspoon ground nutmeg 

¼ teaspoon salt 

4 medium tart apples, thinly sliced 

2 tablespoons chopped pecans

DIRECTIONS: 

 In a large skillet, heat 1 tablespoon butter over medium heat. Add pork chops; cook 4 to 
5 minutes on each side or until a thermometer reads 145 degrees Fahrenheit. Meanwhile, in 
a small bowl, mix brown sugar, cinnamon, nutmeg, and salt.

 Remove chops; keep warm. Add apples, pecans, brown sugar mixture, and remaining 
butter to pan; cook and stir until apples are tender. Serve with chops.
